POSITION OVERVIEW
The Assistant Executive Steward (Banquets) is responsible with managing all aspects of the Stewarding operations within the Banquets Department, while mentoring the Stewarding team. The Assistant Executive Steward provides strategic leadership, guidance, and direction on initiatives and operational decisions concerning the Banquets Department.
ESSENTIAL DUTIES AND RESPONSIBILITIES
The following and other duties may be assigned as necessary:
- Manage all aspects of Banquets Stewarding operations under the guidance of the Executive Steward (Banquets)
- Directly responsible to control productivity and manage inventory for the Banquets Department
- Directly responsible for all scheduling, supervising, coordinating, hiring, training & development of the Banquets Stewarding Members
- Directly responsible for developing a high-preforming team, creating an engaged work force while increasing productivity
- Oversee the inventory process of china, glass, flatware, and supplies for the Banquets Department
- Responsible for storing, requisitioning, inventory, and purchasing of all materials and equipment assigned to the Banquets Stewarding Department
- Manage breakage program for the Banquets Department and communicating discoveries to F&B Division
- Direct responsibilities include, interviewing, hiring, and training Members; planning, assigning, reviewing, and directing workloads; evaluating and appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems
- Responsible to mentor and prepare associates for promotion
- Responsible to ensure the Banquets facilities and systems run in an efficient manner in accordance with protocol
- Assists with the maintenance and repairs for all banquets kitchen equipment; Track the repairs of the banquet kitchen equipment repairs and execute contingency plans when cannot be immediately repaired
- Indirectly responsible for all aspects of ware washing and cleaning of banquets food preparation areas
- With oversight from the Executive Steward (Banquets), manage Banquets Stewarding Operations as required for the efficient operation of the department, including Health, Safety, FDA and OSHA regulations
- Monitor and audit all venue daily shift inspections to ensure all venues are following Fontainebleau inspection policies
- Maintain and manage Banquet Stewarding policy manuals to ensure compliance along with continual development of the Department
- Originate SOP’s, policies, and procedure when applicable
- Maintain acceptable records, including attendance tracking and employee related files
- Approve disciplinary action in accordance with policy when action is needed, along with providing development advise on correcting negative behavior of an associate.
- Partner and foster relationships with Food & Beverage Division & Kitchen management teams to ensure Banquets Stewarding operational goals are being met
- Temporary or permanent duties and responsibilities may be added to or modified as deemed necessary
QUALIFICATION REQUIREMENTS

- High School Diploma required
- Minimum five (5) years' experience managing high volume, multi-unit hotel, banquet/entertainment venue setting, casino, or food service establishment kitchen as Assistant Executive Steward level or above required
- Proven track record of success with the ability to execute with the ability to increase results year-over-year
- Must possess advanced knowledge of kitchen operations, F&B equipment, kitchen facilities maintenance & repair, janitorial operations, and food service & production operations
- Must possess knowledge of all types of commercial kitchen equipment
- Comprehensive knowledge of safe, sanitary food handling procedures, preparation methods and supervision
- Working knowledge of various cleaning chemicals and agents; knowledge of MSDS sheets and procedures
- Complete knowledge of health and safety regulations
- Must have basic knowledge of Microsoft Office software
- The ability to meet department goals and action plans in accordance with standards and overall company goals
- Knowledge, understanding, and compliance with policies and procedures, job descriptions, daily memorandums, statutory requirements regarding health and safety, sanitation, proper chemical usage, fire procedures, and HACCP
- Ability to execute guidelines for proper staffing to maximize efficiency and minimize labor costs
- Excellent interpersonal skills to deal effectively with guests, management, employees, and other outside contacts
- Ability to provide leadership and direction contributing to the success of the organization through engaging, developing, and mentoring individuals and teams
- Excellent customer service skills
- Able to lead and mentor a team
- Excellent organizational skills; be able to function under time constraints and deadlines with attention to detail
- Must be willing and able to work a flexible schedule to include nights and weekends
- Work in a fast-paced, busy, and somewhat stressful environment
SUPERVISORY RESPONSIBILITIES
This position supervises all positions within the Stewarding department for the hotel.

Member must be able to qualify for licenses and permits required by federal, state, and local regulations.
LANGUAGE SKILLS
Ability to read and interpret documents in English, such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to read and communicate verbally in English. Written communication skills in English may also be required.
REASONING ABILITY
Ability to apply commonsense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.
