Job Title: Dietary Manager Department: Dining Services
Baptist Village Okmulgee is seeking a highly qualified and experienced Dietary Manager to join our team. The successful candidate will be responsible for providing high-quality dining services that meet the preferences and dietary needs of our residents while complying with all applicable food and sanitation regulations.
Responsibilities:
- Supervise and assist staff in the production of all menu items, including using recipes and production records, using high-quality ingredients, operating kitchen equipment, portioning, and garnishing.
- Conduct quality assurance tests for all menu items.
- Supervise safe food handling procedures for cooking staff with special emphasis on critical control temperatures.
- Inventory supplies daily to ensure proper stock levels for the preparation of menu items.
- Supervise and assist staff in maintaining high standards of sanitation and safety.
- Maintain the preventative maintenance program for kitchen equipment.
- Assist in reviewing and controlling food, labor, and supply cost. • Control overproduction, waste, and theft of all products.
- Monitor use and misuse of equipment, utensils, and cleaning supplies.
- Maintain accurate daily production records to aid in future production, purchasing, and control of expenditures.
- Orient and train new employees, coach staff.
- Plan meal production and assign tasks to ensure equal distribution of work and promotion of teamwork.
- Prepare staff evaluations. • Hold regular meetings to provide information and discuss concerns.
- Participate in and support the resident-centered Life Enrichment program.
- Perform other duties as assigned. Qualifications:
- Must be experienced as a cook.
- Must be knowledgeable about developing meals to respond to special dietary needs.
- Must be able to work flexible hours.
Working Conditions:
- Works in a sometimes hot and humid and sometimes cold kitchen area. Area may become congested and noisy during busy times.
- Works with stoves, griddles, steam cookers, refrigerators, food mixers, food processors, meat slicers, dishwashing equipment, sinks, knives, and various utensils, pots, and pans.
- Work hazards include hot surfaces, steam, wet floor, hot oil, heavy lifting, knives and other sharp objects, mechanical equipment, and cleaning chemicals. Physical Demands:
- Must possess sight/hearing senses, or use prosthetics that will enable these senses to function adequately so that the requirements of this position can be fully met. • Must be able to relate to residents and staff in a courteous and diplomatic manner under all circumstances.
- Must be able to stand for multiple hours in duration.
