Job description
As the main point of contact between service team and kitchen, the Expeditor is responsible
for communicating with the Chef and culinary team to ensure impeccable timing and
coordination of guest orders so that food is delivered to the guest to the timing and standard of the
restaurant. The Expeditor notes all dietary restrictions and food allergies to pertaining menu
items, and double checks all dishes before sending/delivering them to assigned tables. Responsible
for coordinating the runners and any other assisting team member, this role is critical to ensure
smooth communication thru our high paced service.
  • Complete all opening, mid, and closing sidework in accordance to station assignments.
  • Organize orders as they come through to kitchen, note and communicate any special-order requests or allergies to Expediting Chef and/or kitchen team, and communicate accurate substitutions
  • Serves to support the Chef by being attentive to all that is occurring within the dining room, relaying relevant information to the Chef and maintaining a full awareness of the flow within the dining room to assist the kitchen in their execution.
  • Maintain a constant pulse on each table and understand their progress through own observations and communications from team.
  • Ensure that the mis en place is in order: maintenance of all table-side service equipment,knowledge of which courses will need table-side service for each service period
  • Ensure that station set-up and breakdown is completed for each service period.
  • Maintain knowledge of all china, glass, silver, and specialty service pieces and their storage locations; know all table markings for individual dishes and courses.
  • Maintain all plate inventory and lead the monthly inventory.
  • Strive to anticipate the needs of the kitchen.
  • Provide leadership for the kitchen server team by demonstrating clear and articulate communication; give clear direction to the service team by accurately calling out positions and table numbers.
  • Be the high-energy force in the kitchen; keeping the kitchen service team moving and performing appropriate tasks. Manage time to multi task and work efficiently.
  • Communicate with Managers of any breakage, dissatisfactions or areas of potential conflict.
