Position Purpose: A Salad Cook is responsible for preparing cold appetizers and dishes

Key Responsibilities and Daily Tasks

1. Follow the executive chef’s prep list and recipes to plan daily work for your station

2. Responsible for preparation and plating of salads, appetizers and other cold dishes

3. Update supervisors when stock of food items or supplies are low

4. Prepares dressings, purees, foams, and other components of a dish

5. Manages own time, knowledge of quantity of food production, has knowledge of fresh fruits, vegetables, meats and seafood, and basic skill in using needed equipment

6. Skill in measuring and/or weighing ingredients

7. Proper portioning of food to be served according to recipes

8. Utilizes chef’s knife, mixer, food chopper, blender, ovens and measuring equipment

9. Food of highest quality possible

10. Inform managers about broken or malfunctioning equipment

11. Own you station - sanitize work areas and equipment, wash dishes, take out trash

12. Properly store food items in designated containers, labeled and dated

13. Stock pantry and refrigerator shelves in an organized manner
